Chill watermelon, cream and mixing bowl in the fridge.

Cut watermelon into a cake-like cylinder, dry with paper towels, return to fridge.

Beat the whipping cream in the chilled bowl until thick and fluffy.

Add the vanilla, then gradually beat in the powdered sugar, 1 or 2 Tbsp at a time, testing for flavor and consistency.
