Cream the butter and sugar until well combined.
Add the egg, vanilla, and sea salt to the butter and sugar mixture.
Stir the coconut flakes and sunflower seeds into the butter mixture.
Combine in a separate bowl: oatmeal, whole wheat pastry flour, and baking powder.
Mix these dry ingredients well and add to the butter mixture.
Use a tablespoon to scoop and roll batter into small balls, place on parchment lined baking sheet.
Flatten each ball slightly. Bake at 375° for 10-12 minutes.
