 1.5 cups multicolored rice (prepare per package directions)
 1 small cucumber peeled, seeded, finely chopped
 1/2 cup green onion, sliced
 1 can sliced water chestnuts
 1 red bell pepper finely chopped
 2 cups chopped fresh spinach leaves
Dressing
 1/4 cup olive oil
 1/2 cup chicken broth
 1 tsp curry powder
 1/4 tsp fresh ground pepper
 1/8 to 1/4 tsp red pepper flakes
 1/2 tsp salt
