Lima Bean Burgers

Yields8 Servings

 1 can (15oz) lima beans, or pre-soaked, pre-cooked beans
 1 small onion, chopped
 1 tbsp chopped bell pepper
 6 crackers, crushed
 1 beaten egg
 ½ cup shredded cheese
 ¼ tsp garlic powder
 ¼ cup vegetable oil or spray

Drain canned or cooked beans and mash in a large bowl.

Add onion, pepper, crackers, egg, cheese, garlic powder, salt & pepper.

Divide into equal halves, repeatedly, until you have 8 equal portions. Shape into patties.

Heat oil (1/4 inch deep) in a large skillet over medium-high heat. Fry patties until golden, about 5 minutes on each side. Alternatively, use griddle to brown patties and buns.

Serve with vegetable toppings and condiments.
