Boil the potatoes with salt.
Transfer the boiled potatoes on a baking sheet while still warm. Press with a clean glass until they are flattened out.
Pour the oil over the still-warm potatoes.
Sprinkle with rosemary, pink peppercorns and salt.
Bake in a preheated oven at 450°F for 20-25 minutes. Turn over halfway through baking.
Serve warm. Use the lime to add intensity to the color of the potatoes—it's fun!
