15ozGarbanzo beans, drainedOr bean of choice
1.50cupsFrozen corn, thawedPeas or green beans also work
1cupgrape tomatoes, cut in halfOlives, grapes or cucumbers also work
2cupsFresh greens, sliced
5Green onions, chopped
1Red bell pepper, diced (optional)
For the dressing
2tbspFresh lemon juice
1.50tbspFresh basil, slicedCilantro, parsley and thyme all work
Place cooked grains and drained beans in a large bowl.
Add corn, tomatoes, greens, green onions and bell pepper to bowl.
Slice the basil for the dressing. Measure out ingredients for the dressing into a jar. Cover the jar with the lid and shake to blend.
Pour the dressing over the top of the vegetables and grains and mix well to combine.
Dice or slice other favorite vegetables from the garden and add to the salad
Top the salad with crumbled feta cheese before serving
Top the salad with toasted pine nuts before serving
Garnish with additional basil or other fresh herbs from the garden before serving
