Ingredients

 3 cups Precooked and cooled whole grains, any of the following prepared according to package directions:Quinoa, Brown rice, Buckwheat, Farro
 15 oz Garbanzo beans, drainedOr bean of choice
 1.50 cups Frozen corn, thawedPeas or green beans also work
 1 cup grape tomatoes, cut in halfOlives, grapes or cucumbers also work
 2 cups Fresh greens, sliced
 5 Green onions, chopped
 1 Red bell pepper, diced (optional)
For the dressing
 2 oz Olive oil
 2 tbsp Fresh lemon juice
 1.50 tbsp Fresh basil, slicedCilantro, parsley and thyme all work
 1 tsp Sea salt

Directions

Place cooked grains and drained beans in a large bowl.

Add corn, tomatoes, greens, green onions and bell pepper to bowl.

Slice the basil for the dressing. Measure out ingredients for the dressing into a jar. Cover the jar with the lid and shake to blend.

Pour the dressing over the top of the vegetables and grains and mix well to combine.

Options:
Dice or slice other favorite vegetables from the garden and add to the salad
Top the salad with crumbled feta cheese before serving
Top the salad with toasted pine nuts before serving
Garnish with additional basil or other fresh herbs from the garden before serving
