2013 Summer Camp Meals of the Day

Ingredients

 1 watermelon – seedless Dulcinea type worked well
 1/2 pint whipping cream
 1/4 c powdered sugar
 1 t vanilla
 toasted coconut chips dangfoods.com/
 strawberries
 blackberries
 kiwi

Directions

Chill watermelon, cream and mixing bowl in the fridge.

Cut watermelon into a cake-like cylinder, dry with paper towels, return to fridge.

Beat the whipping cream in the chilled bowl until thick and fluffy.

Add the vanilla, then gradually beat in the powdered sugar, 1 or 2 Tbsp at a time, testing for flavor and consistency.

Assemble your "cake" and serve with a flourish!
