Based on one recipe by Christopher Quicker 

Ingredients

 2 cans (15oz) lima beans
 ¼ cup roasted sweet bell peppers
 ½ head roasted garlic
 ¼ cup EVOO
 ¼ tsp sea salt
  tsp pepper

Directions

Drain canned beans and place into food processor or blender. Add remaining ingredients and puree until smooth.

Add more olive oil as needed for desired consistency.

Measure 1/4 cup portions for each student, serve with vegetables and pita for dipping.
